    Default For creative fans of Brittone2's Baked Oatmeal recipe....a last question below...

    I just made Brittone2's Baked Oatmeal recipe and it is very good (Hat's off Beth!).

    I know there are a lot of fans here of that recipe and I"m wondering if anyone here has found a way to make this into more of like a "cookie" recipe? It probably has something to do with removing the baking soda but I don't really know how to do it.

    Right now, in the mornings we are usually too rushed to do more than pop an Eggo waffle in the toaster and the boys eat that plain in the car on the way to wherever. But it would be great to have a baked oatmeal version that is more cookie or waffle like, if that's possible.

    Anyone?

    Default Not Beth's Oatmeal but. . .

    This isn't Beth's awesome recipe, but here is one that I make that is cookie like. It's great in the morning and you can freeze them.

    2 cups rolled oats
    2 cups granola (or you can do 4 cups of oats)
    1 cup wheat germ (I use the honey flavored)
    1 teaspoon cinnamon
    2 cups flour
    2 eggs, beaten
    1 cup honey
    2 teaspoons vanilla
    1 teaspoon salt
    1 cup brown sugar
    1/2 cup flax seed
    1/2 cup sunflower seed kernals
    1/2 cup pumpkin kernals (or any other seed will work here)
    1/2 cup chocolate chips
    1 medium bag of dried cranberries

    mix oats, cereal, wheat germ, cinnamon, flour and salt in a bowl and set aside

    mix eggs, honey, vanilla and brown sugar in a large bowl
    add in previously mixed dry ingredients. mix well.

    slowly add in flax seed, sunflower kernals, pumkin seed, chocolate chips and cranberries. Mix well. (you have to use your hands at this point)

    Press into a greased 9x13 baking dish and cook at 350 for 20-25 minutes or until edges are golden brown.

    This ends up being a cross between a granola bar and a cookie in texture. Very yummy. DH bikes to work and he grabs one out of the freezer in the morning and eats it once he gets to work.

    Our version of this is baked oatmeal, just use a little less milk and bake throughly and you can cut it into squares or bars and serve them cold, on the go.

    I would love to try this, but it has eggs. I wonder if I could sub flax?

    You can make it in muffin pans, for, well... muffins. You can also fill the muffin pans only about a quarter of the way to make cookie-like portions. Very similar to the Chewy Energy Circles in the Salad People cookbook.

    I just wanted to point out I got that recipe a long time ago off of some very wonderful mamas over at MDC. Just making sure they got credit as I didn't make this one up on my own

    I'm wondering the same thing. I would love to try this recipe but DS2 is allergic to eggs.

    o_mom - Could you post the recipe for the Chewy Energy Circles. I just got the Pretend Soup cookbook last week and I can't find that recipe in the book. Is it from another cookbook or am I just totally missing it?

    Doh! It's in Salad People. Sorry - should have looked it up. Here it is (not verbatim for copyright reasons):

    Chewy Energy Circles

    Nonstick spray

    1 cup unbleached all-purpose flour
    3/4 cup soy protein powder (substitute flour if you can't find this)
    1/2 tsp salt

    2 cups rolled oats
    1/2 tsp cinnamon
    2/3 cup brown sugar
    1/2 cup raisins
    1 1/2 cup vanilla yogurt
    1/4 cup canola oil

    Preheat oven to 375 deg F, coat 24 standard muffin cups with nonstick spray

    Combine flour, protein powder, salt in large bowl

    Add oats, cinnamon, brown sugar and raisins, and mix.

    Measure yogurt into large measuring cup, Add oil and whisk to combine

    Add wet to dry and mix until completely combined

    Place approx 1 1/2 TBSP of batter in each muffin cup and pat into place

    Bake on center rack for 12-15 min or until brown around the edges.

    Transfer to rack to cool at least 10 min.
