    Default Artichoke Quiche...anyone have a recipe??

    I had a great artichoke quiche a few weeks ago at a restaurant and would love to make one. Does anyone have a recipe? I would rather use one that somebody here likes then just getting one from a recipe website...Also, if you do have a recipe, is it one I can freeze? I've frozen quiches in the past and sometimes they reheat great, and other times it doesn't work so well. Dh is (finally) scheduled for back surgery and I'm starting to make things I can stick in the freezer now to make my life a little easier when he is recovering...

    Sorry, I don't have a recipe for you, but I just wanted to wish your DH well and I hope he has a quick recovery. My DH decided to go ahead with the back surgery and his is scheduled for Monday. So I just wanted you guys a healthy and speedy recovery. Take care and I'm sure someone else here has a great recipe.

    Hi Marci,
    I'm wishing your dh a great recovery!! My dh thought this surgery was going to happen a few months ago, and we finally, after many tests, just got word it will be on the 20th. Your dh is have a microdiscectomy, right? A friend of ours who had that done felt great as soon as they had her up and walking two days after the surgery and stills feels great 4 years later! My dh is having spinal fusion, going in posteriorly and anteriorly. I'm a little nervous to say the least!! I'm really trying to fill the freezer now so I don't have to worry about feeding my family when dh is in the hospital and soon after he gets home!

    Keep us posted on your dh!!

    Mary, Thanks. Yes, he is having a microdiscetomy. We're keeping our fingers crossed that things will go smoothly. It seems so minor compared to your DH, so I can only imagine what you guys are going through. I hope you get your freezer stocked up so that you'll have one less thing to worry about. We will be thinking of you and your family.

    Default Artichoke-chicken casserole *ETA-serve over rice or pasta

    Artichoke-chicken casserole

    1/2 lb fresh mushrooms,sliced
    1/2 C chopped green onions
    2 T melted butter
    garlic salt
    2 8 1/2 oz cans artichoke hearts, drained & quartered
    3 large chicken breasts cooked,boned and diced (I use a whole cooked rotissere chicken)
    1/2 C dry white wine or sherry
    salt & pepper
    3/4 C mayonnaise
    1/2 C sour cream
    1 C grated parmesan cheese

    1. Saute mushrooms and green onions in the butter and garlic salt.
    2. Combine chicken and artichoke hearts in a 2 quart casserole dish.
    Add mushrooms and green onions.
    3. Combine wine, salt, pepper, mayonnaise, sour cream and 1/2 C of parmesan cheese. Fold into chicken mixture and mix well. Top with the remaining parmesan cheese and bake at 350 for 30 minutes.


    ETA- serve over rice or pasta
    Enjoy!! This is one of our favorite dishes.

    Oh my gosh, this looks awesome! Guess what dish we're trying out soon! :) Thanks for posting.

    By the way, I don't like mayonnaise so I don't tend to keep it in the house. Could I use miracle whip or maybe plain yogurt as a subtitution?

    I tried low fat mayo to try and cut out the fat and it was still good, but not as good and creamy. I always use lite sour cream in this recipe and don't notice a difference.
