    Default Do you know the Muffin Man?

    I adapted a recipe and made mini-muffins for my guys this week, to try and sneak in some veggies. Now I'm convinced Jake's first word (other than Mama and Dada) will be "muffin". They both have been gobbling them up, and they're not even too messy! So, I thought I'd share my recipe and see if anyone else has favorite (at least semi-nutritious) muffin recipes?

    Pumpkin Muffins
    1 c. all purpose flour
    3/4 c. whole wheat flour
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp. cinnamon
    1 tsp. allspice
    1 egg, beaten
    1/2 c. buttermilk
    1/4 c. canola oil
    1/2 c. brown sugar--packed
    1/4 c. honey
    1 c. pumpkin puree

    Preheat oven to 375. Spray muffin tin with non-stick spray or line with paper liners. Mix flour through allspice in med. bowl. Mix egg through honey in large bowl. Stir in pumpkin. Stir dry ingredients into ingredients, and mix until blended (but don't overbeat). Fill tins 3/4 full. Bake mini muffins 17 minutes, regular muffins 22 minutes (but times may vary depending on your oven).

    I have a great "choose your own fruit/veggie" muffin recipe that is a basic recipe, then you add whichever fruit or veggie you want to it. So yummy and easy! But the recipe is tucked away upstars. So--please bug me to remember it next time I'm online! :) This is also a way of making a mental note to myself ;)

    Sounds so yummy! I love pumpkin anything!

    I have a semi-related question, too...do you by any chance have a muffin/pancake recipe using baby food? My DS won't eat it anymore, but I'd love to 'hide' some of his veggies/fruits in something that he WILL eat...bread-based products are usually a hit! Thanks!

    a friend adds a jar of baby food veggies to pasta sauce! *not muffins, but it works!

    you can also add zuchinni to those muffins and your kiddos probably wouldn't know it!!!!

    Eileen - this post jarred my memory!

    My favorite muffins:

    Blueberry Oat Muffins
    (Makes 12)

    1 cup rolled or quick-cooking oats
    1 cup sour milk
    1 cup flour
    1 tsp. Baking powder
    ½ tsp. Baking soda
    ½ tsp. Salt
    ¾ cup brown sugar, packed
    1 egg, beaten
    ¼ cup melted butter
    1 cup blueberries (fresh or frozen)

    Preheat oven to 400 degrees. Combine oats and milk, let stand 5-10 minutes. Combine dry ingredients in another bowl. Add egg and butter to oat mixture and stir well. Stir oat mixture into dry ingredients. Fold in blueberries. Fill lined or well-greased muffin tins with an ice cream scoop, and bake for 20 minutes.

    Double the recipe as needed – these muffins freeze really well, if you don’t eat them all before they cool completely.


    My second favorite muffins:

    Carrot cake-like muffins
    (Makes 30-36)

    6 cups grated carrots
    1 cup raisins
    1/2 cup applesauce
    1 cup crushed pineapple, well drained (about 1 regular size can)
    1 cup chopped nuts OR 1 cup shredded coconut (optional)
    1 cup brown sugar

    2 eggs + 4 egg whites OR 4 eggs
    1 cup white sugar
    1/2 cup vegetable oil
    2 tsp vanilla

    3 cups flour
    1 1/2 tsp baking soda
    1 tsp salt
    4 tsp ground cinnamon

    Combine grated carrots, raisins, applesauce, pineapple, nuts or coconut, and brown sugar in large bowl, set aside for 1 hour (or so).

    Preheat oven to 350 degrees. In a medium bowl, beat eggs until light. Gradually beat in the white sugar, oil, and vanilla. Combine flour, baking soda, salt, and cinnamon, and stir into egg mixture until absorbed. Stir in the carrot mixture.

    Use an ice cream scoop to fill lined (or greased) muffin tins, and bake for 25-30 minutes, until a toothpick comes out clean.

    If you frost these, they count as cupcakes, but without frosting they are muffins. YUM!

    Default What's sour milk?

    Petra -

    Is sour milk the same thing as sour cream or is it really milk that has soured (and gone bad)? Is it buttermilk? Is it milk you do something else to? I'd love to try your recipes. They look great!
