You can usually find unsalted roasted pumkin seeds in any health food store. Even some large supermarkets will carry them in their healthier eating sections (i.e . dried fruits, nuts, etc.).
Bear in mind however that throwing the seeds may not be permitted, you'd have to check with your church/location due to the hazard it may present to birds. You may want to consider
throwing rose petals in autumn colors (yellow, orange, red, etc.)
Good luck!

i'm getting married on october 14. i read a tip that someone threw fall leaves. they did it the cheap way by collecting them the day before their wedding. although i have a budget mentality, for about $100 (less than you might spend on the pumpkin seeds), my florist is providing a big basket outside the chapel tied with a bow full off beautiful, CLEANED fall leaves. and i don't have to sweat whether or not i find a spot with enough great leaves, and i also don't have to schedule this collection in the days leading up to my wedding. i figured they'd get musty if i stored them in a plastic bag. and you probably don't have to clean them up at your site, either.

Pumpkin seeds sound like they may hurt??? The leaves would be more unique and practical.
