Belize Honeymoon?!

My fiance and I are searching for a honeymoon destination and it seems like Belize is an beautiful honeymoon spot without killing the budget. Has anyone been there for a trip and/or honeymoon with any recommendations or advice? What are the cool hotels or towns? It looks great... a good mix of tropical beach and relaxation combined with snorkeling, scuba diving, hiking around Mayan ruins, jungle trips, etc. Is this too good to be true or the perfect place for our honeymoon?!

We're going there in May... We're spending 7 nights in Placencia, which is on the southern coast, and the last 4 nights in Caye Caulker.

Ambergris Caye is the most popular destination, but it's also a bit more expensive, and not as accessible to all of the places we want to visit. And while it's supposed to be lovely, we weren't interested in staying in the most touristy area (Caye Caulker is just south of Ambergris, and is much less expensive and touristy).
